Uh huh. I get it! I hear the question all the time. “Why do I need to give any attention to KEFIR? I don’t even know what it is!”
Well. Please lean in. I am looking at you squarely and asking you a few qualifying questions:
(my part) “Are you human?” (Now, this is your part. You can just nod in response, if the question applies.) “OK.”
“Are you digesting food?” (Are you nodding? This was your part.)
“Do you have an immune system?” (I saw you sort of roll your eyes. So thanks for participating!) Woop Woop! YOU have passed the test!
The results are in, and guess what? I am so sure… YOU NEED KEFIR! And now I am rising to the challenge… giving you my best… promising to deliver…. won’t let you down… I accept my mission: convince YOU, you dear skeptical blog Friend, why KEFIR needs to be added to your world!
(Forgive me. Have I mentioned that I teach middle school? It was a long day…)
Let’s just jump to the really important facts about an amazing power food called KEFIR.
We are all familiar with yogurt. Occasionally, even, you might see some bottles of kefir in the dairy section at your grocery store. It is slowly becoming mainstream. However, we are talking here about something much different than store-bought kefir. We are talking about home-made kefir! Why the distinction, you might ask? Store-bought kefir contains 8 – 12 beneficial microbes, whereas home-made kefir contains 30 – 55 different varieties of beneficial microbes! Go over those numbers again. In this case, more is definitely better! Probiotics, Friend! Most single probiotic capsules contain 15 billion microbes. Did you know that a cup of kefir contains TRILLIONS of microbes? ALL GOOD GUYS! You would need a whole bottle of good probiotics to equal what one cup of kefir contains!
A simple fermentation process is required to transform milk into this perfect health elixir! If you can pour milk, you can make kefir. You only need kefir grains (little bubbly-like bundles that resemble miniature cauliflower) and milk! A little instruction and you can be on your way to becoming a kefir-pro!
We need to pause just a second to say that the quality of milk is rather important to the kefir. Full fat (whole milk)… definitely a good idea. Full fat, organic… now we are talking. Full fat, organic, pasture-raised… I’m starting to smile. Full fat, organic, pasture-raised, raw-straight-from-the-local-farmer… oh my, the chuckling and snorting is out of control here! But, let me calm down and say, any milk can be used. Choosing the variety you prefer is… well… of course, up to you. (We need to really look at the morphing of milk over the last decades with pasteurization and homogenization. What started out with good intentions has certainly proven to be a major contributing factor to the 600,000 annual deaths due to heart disease in our beloved land! Stay tuned for more on that research. I will post soon.)
When the kefir is ready to be enjoyed, I blend in combinations of fruits, honey, vanilla, stevia, maple syrup, cocoa powder, coconut oil, nut butters, etc. The flavor possibilities for kefir smoothies are endless! And then there are all the possibilities with dips and dressings and ice cream and cream cheese and, and, and. See what I mean? Kefir presents so many palate possibilities! But here’s the best part… beyond the scrumptious smoothies and the delightful dips, kefir actually abounds in healthful attributes! The fermentation process even renders this healing elixir almost completely free of lactose! So, if any are dairy-intolerant… guess what? Kefir is still a possibility for you! (The grains actually eat up the lactose during fermentation!)
Legend tells us that ancient civilizations actually fought battles to capture these mysterious grains because they seemed to give enemy troops a true advantage in strength and vigor. Only recently have studies (in English) revealed some of the reasons why kefir is so excellent for our bodies…
KEFIR IS A GREAT SOURCE OF ALL SORTS OF VITAMINS. B12, THIAMINE, FOLATES, BIOTIN, K2 — ALL OF THESE NUTRIENTS ASSIST THE BODY IN DIGESTING AND UTILIZING THE PROTEINS, FATS, AND CARBOHYDRATES THAT WE EAT. These are the foundations for cell growth, and energy production, and overall health!
KEFIR IS A VERY POWERFUL PROBIOTIC. IT CONTAINS BENEFICIAL YEASTS AND BACTERIA. ACTUALLY IT CONTAINS ALL SORTS OF GOOD FLORA THAT THE GUT MUST HAVE REPLENISHED REGULARLY TO MAINTAIN OPTIMAL HEALTH (especially if antibiotics have been used).
KEFIR HAS BEEN SHOWN EFFECTIVE IN CONTROLLING THE BODY’S RESPONSE TO ALLERGENS.
KEFIR HAS ANTI-BACTERIAL AND ANTI-FUNGAL PROPERTIES SPECIFICALLY TARGETED TO THE “BAD GUYS” WHICH OFTEN OVERTAKE THE DIGESTIVE TRACT AND LEAD TO UNTOLD ILLNESSES.
KEFIR CONTAINS COMPONENTS WHICH REDUCE INFLAMMATION OF INTESTINAL CELLS. It works to HEAL the gut!
EVEN TUMOR GROWTH HAS BEEN STUMPED IN KEFIR STUDIES! KEFIR IS PROVING TO PLAY A ROLE IN PREVENTING CANCERS.
KEFIR HAS PROVEN TO BE AN EXCELLENT DIGESTIVE AID BECAUSE OF THE ENZYME CONTENT IT FLOODS INTO THE GUT. The components in kefir actually work to “pre-digest” much of our food for us.
KEFIR CONTAINS ALPHA HYDROXY ACID WHICH IS OFTEN ADDED TO EXPENSIVE SKIN PRODUCTS. AHA SOOTHES THE SKIN, REDUCES SIGNS OF AGING, PROMOTES HEALTHY NEW CELL GROWTH… and is produced through the fermentation process of making kefir! So, evidently ladies… not only should we drink it, we could soak in it!
KEFIR EVEN HAS PROVEN TO BE A GREAT TOOL FOR REGULATING BLOOD SUGAR!
A remarkable mentionable is a Russian bacteriologist named Ilja Iljitsch Metschnikow. Haven’t heard of him yet? Well, he won the NOBEL PRIZE in 1908 for unveiling the life-extending properties of kefir! Today, the Russians consume more kefir than any other culture. It was in fact the Russians who managed to keep these grains a secret for centuries (that wasn’t very nice). First discovered in the Caucasus Mountains over 2000 years ago and later mentioned in the journals of Marco Polo, these grains are now shared with the world (and the world sends thanks). The name, “kefir”, actually is Turkish for “good feeling.” Kefir grains cannot be reproduced in any lab; they are a gift from the Lord! They can literally last for generations… becoming a true family heirloom.
With a little research, you can read story after story of remarkable results that people have reported with the simple addition of kefir to the diet. I have read of IBS and ulcerative colitis being reversed. I have read of eczema calming, yeast infections dissipating, chronic fatigue vanishing. There are stories of colicy babies helped, acid reflux controlled, psoriasis soothed, anxiety melted, and depression lifted! Diabetes controlled, blood pressure reduced, leaky gut corrected. Folks tell of using the kefir grains topically on skin wounds and experiencing excellent healing. Some people ingest the actual grains to assist the healing of severe digestive illness. Many diverse and exciting health improvements have been experienced all over the world. These stories could be just “nice and well” except many of these have been experienced in my own family! Once you experience remarkable change, you TOO might become bold and bothersome about kefir… uh.. like me!
So, what do you think? Remember we are rethinking wellness here. My favorite little word duo… WHAT IF. As in, WHAT IF you try home-made kefir, and just see for yourself? Even if you are feeling quite well with nary a pain or ache, adding kefir might just help you stay that way for years to come. Boosting the immune system and assisting the digestive tract are two powerful ways to bless yourself with wellness! Kefir accomplishes both of these missions for the human body. The process of making kefir is truly simple. Such a small time investment (a 3 minute daily ritual) in light of the enormous gifts you and your family will be sure to enjoy.
